Hirven sydän kiinalaiseen tapaan
Tarvitset:
300g hirven sydäntä (myös naudan tai porsaan sydän käy)
yksi paprika
chiliä mieltymysten mukaan
3 valkosipulin kynttä
pala tuoretta inkivääriä
kiinalaista soijaa (mieluusti sekä vaaleata että myös tummaa)
Sichuan pepper
öljyä
laadukasta suolaa makumieltymysten mukaan
valkoviiniä/likööriä (ei välttämätön)
1. Siisti palasesta pahimmat siteet ja kalvot
2. Leikkaa sydämenpalanen neljään osaan ja laita palaset kattilaan kylmään veteen. Laita kattila liedelle ja liesi täysille. Kun vesi kiehuu sydämessä olevat loput veret muuttuvat vaahdoksi ja vaahto nousee pinnalle. Kuori tämä vaahto pois kauhaa apuna käyttäen. Noin kymmenen minuutin päästä vaahtoa ei enää nouse pinnalle, jolloin voit ottaa sydämen kattilasta leikkuulaudalle viipalointia varten.
3. Leikkaa sydän ohuiksi viipaleiksi
4. Leikkaa paprika, sipuli, inkivääri ja chilit. Itse käytin tänään chileinä yhden tuoreen lemon dropin, palasen kuivattua naga morichia ja pari kuivattua kiinalaista chiliä.
5. Laita öljy ja sichuan pepperit wokkiin ja levy täysille
6. Kun öljy on kuumaa lisää inkivääri ja kuivat chilit, sekoita 20 sekuntia ja lisää sen jälkeen sydänviipaleet.
Lisää myös tilkka valkoviiniä/likööriä. Paista koko ajan sekoittaen minuutin ajan..
7. Lisää paprika, tuore chili ja suola. Paista minuutin ajan taas sekoittaen ja nauti chilin tuoksusta :D
8. Lisää sipuli ja valkosipuli. Paista puoli minuuttia sekoittaen.
9. Lisää soija ja paista minuuutti sekoittaen.
10. Nauti makuhermoja kutkuttelevasta tulisesta sydämestä!
